Turning Off Auto Update only stops the AAOS OTA updates. It doesn't stop the App updates or Google Maps and quite probably other stuff! So personally I let mine update as and when it's available.
Sincere thanks for your reaction, gentlemen. Rebooting the Head Unit seems to have done the trick. It’s all back to normal : the Volvo Cars app now shows the car where it actually is, and the XC 60 at startup is gone.

By the way, the wrong location shown was/is a parking in the Zeebrugge (B) port area, where Volvo Cars sometimes stocks cars awaiting shipment to UK. Pure coincidence ? Hard to believe…..
Still, my wife’s ex-car, the Volvo XC40 in question, never had anything to do with the UK : at the time, it was delivered freshly assembled straight from the Volvo Cars plant in Oostakker Ghent to a Belgian Volvo dealer.

3.19 has been out for months, aren't we waiting on the now what appears to be abandoned 3.24 which was/wasn't released at the end of August?
Button below Central Display, hold down until display goes completely black. Wait a few minutes for it to fully restart then reboot the modem by pressing and holding the Front Screen Heater button until the overhead SoS button Flashes Red.
